Thanksgiving recipes: Sweet potato casserole from Kris Jenner
The Kardashians have been getting a lot of negative publicity lately, so we thought we'd toss a bit of Thanksgiving cheer their way by featuring Kris Jenner's recipe for sweet potato casserole in our series of posts for Thanksgiving recipes. This recipe is from a November 2010 episode of "The Rachael Ray Show," where Kris Jenner stopped by to do some cooking with Rachael. We can also attest - we tried this last year and it was delicious.
Ingredients
- 2 Sticks Butter (Melted)
- 6 sweet potatoes
- 1/2 of a 2lb. box of Brown Sugar
- 2 Cups White Sugar
- 6 Eggs (Beaten)
- 1 Can Eagle Brand Sweetened Condensed Milk
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Cinnamon
- 1 Teaspoon Nutmeg
Boil the sweet potatoes for 20 minutes, until soft, then peel and mash them. Add the two sticks of melted butter and all other ingredients. Mix them together, then add the beaten eggs. Put the entire mixture into a souffle dish and bake for one hour at 375 degrees Fahrenheit.
And when we made ours, due to some high cholesterol for one of our family members, we used I Can't Believe It's Not Butter light sticks and egg beaters. Sure, it doesn't turn the dish into a leafy green vegetable, but it does help the fat/cholesterol content and it still tastes delicious.
