Turkey soup recipe: Alton Brown tackles the remains of the bird
Since "Good Eats" host Alton Brown walked us through brining a turkey, it seems only fitting he tell us what to do once the bird has been reduced to a carcass.
In his "Remains of the Bird" special, the Food Network personality gives us a recipe for turkey soup. What we love about it is that it's not terribly labor intensive or include odd ingredients.
The video above is fairly self-explanatory, but if you want to print out the ingredients to go shopping, here you go:
Leftover Turkey Soup Recipe
Ingredients:
- 2 quarts vegetable stock
- 1 turkey carcass
- 1 (10-ounce) box frozen mixed vegetables
- 1/2 cup rice
- 2 cups cooked turkey, cubed
- 1 teaspoon Old Bay seasoning
- 2 teaspoons dried thyme
- Salt and pepper, to taste
Directions:
Combine the vegetable stock and the turkey carcass in a large soup pot over low heat and bring to a simmer. Cover and simmer for 1 hour.
Add the remaining ingredients to the stock. Cover and simmer for an additional 20 minutes.
Remove the bones before serving.
